Where you get Golden, Crusty, and Chewy hand-rolled Boiled, Boarded and Baked bagels that are perfect to enjoy with your Sunday Brunch. All of our bagels are made from scratch utilizing a simple, yet complex, process using only organic ingredients.

How we make our bagels

First we make our dough by mixing flour with yeast and combining it with barley malt syrup and water. Then we let it rise. Once it has risen we add Redmond Real Salt, the remaining flour and we knead, knead and knead! The dough will rise again before we put it into the walk-in box to rest where it will ferment for two days. This part of the process creates a superior flavor. By Saturday afternoon the dough is ready and we hand-roll it to form the perfect bagels.

Sunday morning we prepare the toppings and then boil the bagels in a mixture of water, barley malt syrup, and sugar. After being boiled for the perfect amount of time, they will get a golden crisp exterior and chewy interior upon the completion of the baking process. Then we cover the bagels with toppings and place them on our bagel boards (cedar planks covered in burlap and soaked in water). The boards, now filled with bagels, are placed in the oven for a few minutes and then get flipped onto hot stones to complete the baking process giving you the best brunch bagel you will ever experience!
